We do love the original tomato based Shakshuka but this is a good way to get your greens with your eggs. :)
1 red onion, finely chopped
2 cloves garlic, chopped
1 teaspoon ground cumin
1 bag (approx 500g) silver beet (or spinach), trimmed and finely sliced
1/2 cup cream
5 Traditional Free Range Eggs
100g feta, crumbled
2 spring onions, finely sliced
Heat a film of oil in a large heavy based frying pan and cook the onion and garlic over a gentle heat for about 10 minutes until the onion has started to soften. Add the cumin and cook for an extra minute before adding the silver beet. Cook for another 10 minutes or so until the silver beet is tender, add the cream and season with salt and pepper.
Make 5 small nests in the spinach and break and egg into each.
Cook just until the whites are set and the yolk still runny.
Sprinkle with feta and spring onions and serve for breakfast/lunch and an easy dinner. We like to serve it with grilled pita bread.
